How To Make The Best Paella. So how do you make the best Paella?

Hi, I'm Gary, and I have been cooking the best Paella throughout the UK since 2011. I own and operate my small Paella catering business called, Your Paella.

One of the most common questions I am asked when I am cooking Paella at a wedding or a birthday party is, " So how do you cook the best Paella? What's the secret?" Normally, my reply is, "Just hire me to do it" This creates a laugh, but then I do go into the art of creating THE best Paella

So how can I be so confident that the Paellas I cook are the best? Simply because of the amount of my clients who have said to me, "That's the best Paella I've ever tasted!" 

OK, let's get to it. Let's make the best Paella.

You will need these items before you start,

  1. A good sharp kitchen knife.
  2. A chopping board.
  3. A Paella pan.
  4. A big kitchen spoon.

Now, let's get the ingredients. I can't talk about how much of each ingredient you will need, as I have no idea what size Paella you intend to make. As a professional Paella caterer, I make Paellas that can serve hundreds of people in one sitting. I'm guessing, you may not be cooking for some many, so I will give you the ingredients, then you must work out the amounts depending on how many people you will be serving.

Ingredients you will need,

  1. Extra virgin olive oil.
  2. Spanish chorizo sausage. Onions.
  3. Chicken breast/s.
  4. Red, Green and Yellow peppers,
  5. A tin of tomatoes.
  6. Water.
  7. A packet of vegetable stock.
  8. Paella rice. 
  9. Mussels.
  10. Prawns.
  11. Calamari.
  12. Your favorite shellfish.
  13. Fresh Lemons
  14. Tin foil

How To Make The Best Paella

Get your knife and chopping board, then chop up the onions, not too small or too big, then set them aside. Now chop up your peppers, again, not too small or too big. Set them aside. Chop up the Spanish chorizo and the chicken breast, nice chunks of each is best. Get your mixed shellfish in a suitable location near your cooking area,

Once you have all the ingredients chopped and in place, put your Paella pan on the heat source, I use specialist Paella gas burners.

Heat the Paella pan with some extra virgin olive oil in it. Not too much oil, just enough to fry the chicken. Place the chopped chicken breast into the Paella pan and as soon as it goes white on the outside, put in the Spanish chorizo sausage, and fry them together just until the chorizo sausage starts to look cooked. Next, put in the onion. If your Paella pan is hot, be aware that it may make a lot of noise and steam, stay calm lol.

Stir everything in the Paella pan for a couple of minutes, then add the chopped peppers, give it all a bit of a stir, and now add your tin of tomatoes. Now mix everything thoroughly.

Get a jug of water and pour it into the Paella pan. Add your vegetable stock. Again, you will need to work out how much depending on the size of the Paella you are making. Now stir it in. Take your Paella rice, and add that to the Paella pan. Stir it all around the Paella pan. Now add your sachet of Paella seasoning. Stir it in until all the rice has changed color.

Bring to a boil, (if not already) and leave it to a gentle bubble until the rice begins to expand. Stir a little to stop it sticking to the bottom of the Paella pan.

Add water as necessary to stop the Paella from drying out, but not too much. 

Once you have a good consistency, place all of your shellfish on top, you can even push the mussels under the water and rice.

Turn down the heat to low. Now cover with tin foil. Allow to simmer. After 5 to 10 minutes, look and see if the prawns are pink and the mussels have opened, if not, cover again and keep checking until they are.

Get some plates and serve up the best Paella! Cut some fresh lemon slices and squeeze over your Paella.
